Cheesy Courgette Boats

Courgettes are so under-rated and they are just not eaten enough. They have so many health benefits, they are a great source of a mineral called potassium which helps keep our muscles working properly so that we can move around. Courgettes are also a great source of vitamin C and folic acid.

For these delicious healthy babies you will need:

  • 4 large, halved Courgettes
  • marinara sauce
  • Shredded Mozzarella
  • Mini pepperoni
  • Fresh Basil

Method:

Step 1:

Heat oven to 350 degrees and empty the insides of the courgettes wedges in a bowl.

Step 2:

Put olive oil in a pan and heat the Courgettes for 5 minutes. Then add the marinara sauce in it.

Step 3:

Put the courgettes on the baking tray and put some sauce in them, Top them with cheese and pepperoni and bake it until cheese is golden.

Step 4:

Serve the Courgettes with basil as garnishing.

Also great served on the BBQ when the weather heats up
