With my love affair of Asian cuisine whilst I travelled the world for 3 months I fell in love with the food in South-east Asia particularly In Southern Thailand. You would think on your travels without exercising that you would come back a little larger? I actually came back slimmer as the food was just so healthy and fresh. I lived on stir-frys with rice and gorgeous soups like this Spicy Tom Yum Soup I just make for lunch.
This gorgeous soup is more than just a zesty broth. It contains incredible ingredients that are known to help fight cancer and most of the spices I used in this soup are known for their amazing powers to help with anti-inflammatory properties and are a fantastic antioxidant. The power of this soup is certain to boost your immune system naturally and keep you warm.
What you need:
•4 cups (1l) vegetable stock
•2 tbsp. (30g) Tom yum paste
• ½ cup (100ml) canned coconut milk
•1 cup (225g) chopped tomatoes, canned
•1 cup (100g) mushrooms, roughly chopped
•¾ cup (200g) shrimps
•2 tbsp. fish sauce (I used blue dragon)
•1 tbsp. lime juice•coriander, to garnish•chili, to garnish
What to do:
Pour the stock into a pot, add the tom yum paste and bring to a boil.
Add coconut milk, tomatoes and mushrooms, and cook for about 5 minutes.
Next, add the shrimps, and cook for about 1 minute on low heat. Season with fish sauce and lemon juice.Garnish with fresh coriander and chili to serve.
