Banana Pecan Walnut Muffins

Super easy to make and simply delicious. 

What you need:

✅2 cups @flahavans oats 
✅2 large @fyffes_ireland bananas
✅2 large whole eggs
✅1 cup plain @gleniskinsta Greek yogurt
✅2 Tbps raw honey
✅1 1/2 tsps baking powder
✅1/2 tsp baking soda
✅1/2 tsp vanilla extract
✅1/8 tsp sea salt

Toppings 

1/2 cup combined 
dark chocolate chips, chopped walnuts, chopped pecans, raspberries

What to do:

Preheat your oven to 180c and lightly grease a muffin tin with oil. I used coconut oil

Place all of your ingredients EXCEPT the topping in the blender

Blend all the ingredients on high, until the batter is pretty much smooth for about 3 minutes.  Then, stir in the toppings into the batter.

Divide the batter into muffin tray filling each no more than 3/4 of the way to the top, to leave room for each muffin to expand when it cooks.

Bake in preheated oven for 15 minutes, just until the tops of the muffins set. To make sure they are cooked stick a cocktail sausage stick in the centre. If she comes out clean they are cooked

Cool for 15 minutes (if you can wait)
