Hazelnut & Cranberry Quinoa Crumble

A very berry nice crumble!
That magical time of the year is upon us for festive food, drinks and cheer. This festive season I would like to remind you all that it's ok to indulge, one bad meal won't change you, just like one good meal won't change you. It's a time for joy and sharing food, and spending time with friends and family, and the importance of including those whose who may be spending Christmas alone! Christmas is not a time for feeling guilty over eating and enjoying the rich delicious food nor is it a time for punishing your body the next day over having a night of madness! Enjoy every second of it, just control yourself, know when enough is enough, you can get back in the saddle again a few days after Christmas. For now kick back and enjoy this magical time. If you have a sweet tooth you're going to love this recipe, its my very berry nice crumble of Hazelnut & Cranberry Quinoa. It's delicious and so easy to put together and it will go down a treat with all the family. Also there are so many good benefits to eating quinoa such as: Rich in fiber, minerals, antioxidants and all nine essential amino acids, quinoa is one of the healthiest and most nutritious foods on the planet. It may improve your blood sugar and cholesterol levels and even aid weight loss.

Ingredients

  • 1 lb. (500g) fresh cranberries
  • 2 apples, peeled & chopped
  • 4 tbsp. honey•scant ½ cup (100ml) water
  • ½ cup (75g) hazelnuts
  • 1.4 oz. (40g) puffed quinoa
  • ¼ cup (15g) coconut chips

Instructions

  1. Heat the oven to 360°F (180°C).
  2. Place the cranberries, chopped apples, 1 tbsp. of honey and 50ml water in a saucepan. Gently bring to the boil. Cook for 10 minutes until the cranberries start falling apart.
  3. Scoop the mixture into 4 oven-proof dishes of 3-4 inches (8-10cm) diameter.
  4. Chop the hazelnuts coarsely, mix with the puffed quinoa and mix with 1 tbsp. of honey. Then spread the mixture over the fruit in the dishes.
  5. Bake in the oven for 20 minutes. Serve hot, garnished with coconut chips.
  6. Enjoy!
