These healthy low fat Dubliner Cheese protein muffins are loaded with goodness and super easy to make.  I love them because you can make them in batches for meal prepping and they taste so delicious.  You can have them for breakfast, lunch or a post workout snack as they are super high in calcium and protein. They make a great savoury pick me up that are totally guilt free.

Recipe – Makes 12

What you need:

✅ 6 large organic eggs
✅ 1 cup of freshly grated Dubliner Cheese mix of white and red mature Dubliner Lighter range (33% less fat)
✅ 1.5 cups of spinach
✅ 6 organic tomatoes chopped finely
✅ 3-4 cloves of garlic
✅ few fresh basil leaves
✅ unsalted butter for greasing muffin tray
✅ olive oil
✅ Muffin tray/s
What to do:
✅ Preheat the oven to 180°C
✅ Beat the eggs into a jug or bowl until combined and mixed evenly, leave to one side
✅ Chop tomatoes finely and place in a small bowl, add in 2/3 garlic cloves with some fresh basil leaves, drizzle with olive oil
✅ Mix this mixture around and leave it in the fridge for 10 mins to allow all the lovely flavours to combine nicely
✅ Grate freshly grated Dubliner Cheese Lighter range, leave to one side
✅ Wilt some spinach, leave to one side
✅ Grease each muffin tray lightly with unsalted butter so the muffins don’t stick (very important)
✅ Place an even mixture of your tomato mixture (that you placed in the fridge) evenly into each muffin
✅ Then do the same with the wilted spinach, place evenly on top of the tomato mixture
✅ Pour the egg mixture on top of each muffin case until it’s almost at the top/evenly
✅ Spinkle each muffin with a nice portion of Dubliner Lighter Cheese
✅ Season with salt and pepper
✅ Place into the oven on 180°C for about 10-12 mins, cook until the muffins are golden brown
✅ Remove from the oven and pop each muffin out of the tray carefully with a dessertspoon
✅ Place on a wire rack to leave cook for a few minutes and serve while still hot.
